I need a 1.5" x 1.5" inch barb union. If I cut off the threaded end, will that leave me with two 1.5 " barb ends?

Hi, Karl. Yes, cutting off the threaded end will leave only the barb connections. If you're looking for a Barb x Barb (1-1/2"), you can use this Coupling, 1-1/2" Barb x 1-1/2" Barb - 1429-015.
